Ingredients
1 1/4 cups Alter Eco organic extra virgin olive oil 2 garlic cloves, minced 1 tablespoon oregano 1/4 teaspoon red pepper flakes 8 ounces feta cheese , cut into 1/2-inch cubes (about 2 cups) 1/2 cup coarsely chopped pitted green olives (about 4 ounces)
Preparation
1. Cook 1 cup of the oil, the garlic, oregano, and pepper flakes in a small saucepan over low heat until the garlic is soft.
2. Take off heat, stir in the feta and olives.
3. Cover the pan and let the olives and feta sit until it cools.
4. Add the remaining oil.
Serve with slices of crusty French or Italian bread. Also great tossed with fresh baby spinach and some roasted red peppers.
