			<content:encoded><![CDATA[<p>Preheat the oven to 425 F. Boil the Alter Eco Ruby Red rice with a pinch of salt and use as the first layer in a casserole. Slice and fry the leaks, bell pepper and mushrooms and sprinkle with paprika powder. Use as second layer in the casserole. Whip the yogurt, sour cream, cheese and eggs and pour over casserole as a third layer. Put in oven for about 20 minutes until golden brown.</p>

Rinse quinoa thoroughly in a bowl of cold water. Pour off excess water. Drain well in a fine mesh strainer. Bring broth to a boil with the drained quinoa. Cover the pot and simmer for 15 minutes over low heat. Do not overcook the quinoa. Once it is tender remove from heat and transfer to a large glass or stainless steel bowl, draining if necessary to keep from getting mushy. Gently fluff with a fork and let cool. Meanwhile, place garlic, lemon zest, juice, salt, parsley, mint and oils in a food processor and pulse to combine (you may need to do this in batches if you have a small food processor). Toss this mixture with the cooled quinoa and add the green onions, tomatoes, fennel, carrot and cucumber. Serve chilled or at room temperature.</p>
<p>*Tip:  To make this dish a little more hearty you could add 1 cup of cooked chickpeas when you add the green onions.</p>

<p>Pre-heat oven to 325 degrees. Grease and flour a bundt cake pan. Note: You can use other cake pans, but because this cake is a bit heavy, layered cake pans are not recommended. (Now I understand this comment. I didnt have a bundt cake so used a spring pan and it came out too flat. Muffin pan would be perfect)</p>
<p>Mix all of the dry ingredients together in a large bowl.</p>
<p>Add applesauce and mix well until batter is smooth.</p>
<p>Bake for 50-55 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. If the toothpick comes out clean, that is, not covered in batter, then your cakes is done baking.</p>

Mix in eggs, cinnamon, salt, and baking soda.<br />
Fold in oatmeal, then chocolate chips.<br />
Place on greased pan, a tablespoon amount.<br />
Takes 10-12 minutes to cook. These cookies are crisp!<br />
Place cookies on a rack to cool.<br />
After cookies are cool, and you have tested a few, dip them into the chocolate!<br />
Dip<br />
Place a double broiler on the stove.<br />
Wait for the water to come to a boil.<br />
Place the bar of ALTER ECO Dark Blackout Chocolate into the broiler<br />
Stir the chocolate till completely melted.<br />
Then do the legit dip! You know you are helping farmers increase their profits by taking away the middle man and it is delicious!</p>

			<content:encoded><![CDATA[<p>Preheat oven to 325&#8242; F.  Grease a 9&#215;13-inch pan. </p>
<p>Using a double boiler, melt the chocolate chunks and butter together.  Stir often to ensure even melting, and be careful not to let the mixture burn.  Remove from heat once it is completely melted and well blended.  (But leave it in the double boiler to keep the mixture warm)</p>
<p>Stir in the sugar into the chocolate.</p>
<p>In a separate bowl, lightly beat the eggs and vanilla together.  Add the egg mixture to the chocolate and gently fold and stir in until well blended.</p>
<p>Stir in the flour into the chocolate mixture.  Stir until completely blended and smooth. </p>
<p>Pour the brownie mixture into the greased 9&#215;13 pan,  place in center of oven and bake for 35-40 min.<br />
Let brownies cool completely before cutting.  Enjoy!</p>

Steam asparagus, carrots and broccoli separately until fork tender then immerse in ice bath to cool.  Combine olive oil, vinegar, salt and pepper in separate bowl.  Toss quinoa, vegetables, fresh herbs and dressing in large bowl.  Enjoy!</p>

Step Two: While Rice is cooking, dice celery finely.<br />
Step Three: Chop parsley, removing any stems.<br />
Step Four: Combine all the ingredients for the dressing in a bowl,the juice of one lemon, 3 Tbsp Alter Eco Extra Virgin Olive Oil, salt and pepper to taste. Wisk together till mixed.<br />
Step Five: When rice is done, cool in refrigerator for one hour.<br />
Step Six: When rice is cooled, add dressing and toss till mixed, serve and enjoy!!</p>

2. Take off heat, stir in the feta and olives.<br />
3. Cover the pan and let the olives and feta sit until it cools.<br />
4.  Add the remaining oil.</p>
<p>Serve with slices of crusty French or Italian bread.  Also great tossed with fresh baby spinach and some roasted red peppers.</p>
