Quinoa Tabouleh

Ingredients

1 1/2 cups AlterEco quinoa 3 cups vegetable broth (may substitute water) 2 garlic cloves, pressed 3 medium lemons, zest from 1, and juice from all 3 1⁄4 tsp unrefined sea salt or Himalayan salt 2 bunches fresh parsley, cleaned, trimmed, and rough chopped 1⁄4 cup fresh mint leaves 2 TBS Alter Eco olive oil 2 TBS flax seed oil 4 green onions, finely chopped 2 cups of diced tomatoes, seeded (multi-colored cherry tomatoes, halved, are nice) 1 medium fennel bulb, finely chopped, core discarded 1 carrot, scrubbed and shredded 1 cucumber, seeded and diced

Vegan Low-Fat Chocolate Applesauce Cake

Ingredients

2 cups flour (I used Spelt Flour) 1 cup Alter Eco unrefined sugar 1 tbsp cornstarch 2 tsp baking soda 1/4 tsp salt 1/3 cup cocoa (I used Alter Eco Dark Quinoa Chocolate. 6 squares/about 1.5 oz in food processor) 1 1/2 cups applesauce (mine was homemade with cinnamon, nutmeg, vanilla bean paste and 3 apples)

2 cups of Alter Eco Fair Trade Organic Cane Sugar 1 cup of granulated sugar 1 cup of oat meal ½ pound chocolate chips 2 bars of ALTER ECO Dark Blackout Chocolate 2 eggs 1 teaspoon of vanilla extract 1 teaspoon of cinnamon 1 teaspoon of salt 1 teaspoon of baking soda 2 sticks of butter
